Jason Simon, Owner

In 2008, Jason founded Alba in Des Moines’ East Village with a small budget and a hunger for contemporary American cuisine. Years later, he set his sights on a new kind of restaurant–one that would serve light, delicious fare from across the sea. In Spring 2014, Eatery A was born. Jason led the vision for the back-to-basics menu and décor, celebrating both the simple, fresh ingredients of Mediterranean cuisine and his Iowa roots.

Nic Gonwa, Chef

Nic has worked with Jason at Alba since day one—almost eight years. Now, he’s running the show at Eatery A. At home, Nic enjoys making anything with dough, including pizza and pastas. In 2015, Nic was a semi-finalist James Beard Nominee for Rising Star Chef of the Year. Originally from Des Moines, Nic enjoys sweet flavors with a touch of balance.

Keith Johnson, Sous Chef

Keith, a Des Moines native, feels at home when he's in the kitchen. Growing up, his mother was his source of inspiration as a professional cook. Keith later started in the restaurant industry and worked his way through almost every possible position before circling back to his true passion for cooking. Keith loves to bring that at-home feeling through in his work. In his free time, Keith enjoys spending time with his wife and three kids.

Jared Hess

Jared Hess, Operations Manager

Jared is Des Moines native who has always had an appreciation for food. He was a science and mathematics major at DMACC and Iowa State University. He has worked in the service industry for years, first as a table games dealer at Prairie Meadows Casino and in the last few years as a sever and bartender. Jared has always had a competitive attitude which he utilizes to create inventive competitions and friendly wagers for himself and the staff of Eatery/A. In his free time he likes to run, hike, play sports, and try new foods.

Dave Murrin-von Ebers, Bar Manager

A passionate bartender and mixologist, Dave takes pride in welcoming guests and ensuring they have a great time from the moment they enter until they take their leave. His love for the cocktail culture follows him home where he enjoys throwing together experimental concoctions for friends and family. When he’s not crafting drinks, Dave loves to read, write, and hit the trails running, biking and hiking.

Molly Caldas

Molly Caldas, Guest Relations Manager

Raised on a central Iowa farm, Molly has always been drawn to adventure. She graduated from University of Northern Iowa in Cultural Anthropology, Spanish, and Business. There, she developed international perspectives through her many trips abroad, realizing that people are more alike than different. Molly has spent years in the local restaurant scene, and has found that a way to express her passion for culture is through her belief that food is family. Molly enjoys spending time with her husband, Walter, and her rescue dog, Branca, being outdoors, and creating food and drink combinations in the kitchen.
